How to brew

Gongfu: Use one 6g pearl in a 120–180ml gaiwan or small teapot. Brew with 95–100°C / 203–212°F water. Rinse briefly, then start with a 15–20 second infusion. Extend later steeps as the pearl loosens and opens.

Everyday mug: Use one pearl for 300–400ml of boiling water and steep for 2–3 minutes. Re-steep several times, adding time to later infusions.

When to drink
