How to brew
Gongfu: Use one mini cake in a 120–180ml gaiwan or teapot. Brew with 95–100°C / 203–212°F water. Rinse briefly, then begin with an 8–12 second infusion. Extend later steeps gradually as the cake opens.
Everyday mug: Use one cake for 300–400ml of hot water and steep for around 2–3 minutes. Re-steep several times, adding time to later infusions.
When to drink
