How to brew
Gongfu: Use one mini cake in a 120–180ml gaiwan or teapot. Brew with 90–100°C / 194–212°F water. Rinse briefly, then start with a 15–25 second infusion. Extend later steeps gradually as the compressed tea opens.
Everyday mug: Use one cake for 300–400ml of hot water and steep for around 2–3 minutes. Re-steep several times, increasing the time for later brews.
